My farro sourdoughstarter is working like that: Everyday i am feeding it with farro flour and water, same portion of flour and water. Then i keep it in the fridge in a jar. If i want to make bread i have to take out the portion that i want and then i have to wait 3 hours to use it. The temperature of the the room is 23 - 32 indepence the wather.
