The starter was a gift from my chef. As I was his baker, I decided to try it out.
Mild, slightly tangy flavour. Sweet lactic scent.
Taste & flavour
- 50% Unbleached, untreated all-purpose flour
- 50% Filtered water
Remove 80%, add 4 ounces filtered water and 4 ounces of unbleached/untreated all-purpose flour, mix
100% hydration levain with just water and unbleached and untreated all-purpose flour
50% Unbleached, untreated all-purpose flour 50% Filtered water
