Working at home allows me to use Mitzi to bake sourdough bread almost daily. I just love it!
Mitzi is quite energetic and strong although it's very young. I love to see how it develops and deepens its flavor and potency as it matures.
- 50% Bread flour
- 50% Water
- 33% Starter
- 33% Bread flour
- 33% Water
Since Israel is a warm country I feed it twice a day, with equal weight of bread flower (Stybel 2) and bottled water. Once or twice a week I'll add a little whole wheat flour (Stybel 6), as a special treat. I think she likes it.

Mitzi is a very simple starter - just 100% bread flour and water.
