I watched the show "cooked" by Michael Pollan. I was ready to sink myself into learning something new and that nailed it for me.

I tend to discard almost all of the starter each time.
I am somewhat random in how much i feed my starter as I tend to feed every day. Lately I've had several starters going and use equal weights water and a 50/50 flour (AP and WW).
i mostly bake breads but branched out to english muffins, pancakes, rolls...and i even tried pretzels.
