I started Iven because of a lack of the product here in Florida and the fact that I will not eat grocery store bought bread's.
Iven has a very sweet flavor and marries well with most other ingredients.
Taste & flavour
I always feed Iven in the afternoon so he can warm up from the fridge. He get's on average 2 cups of flour and 1 cup of water.
3 stalk's fresh lemongrass unwashed 4 ounces fresh milled white wheat flour 4 ounces water I used the lemongrass for the wild yeast that lives on it. Just let it ferment till bubbly and has that nice smell.
We like to make crackers.
