After the starter matures, I separate out 180 grams to feed (with 180 grams of bread flour and 180 grams of water). The rest I use in my dough (320 grams).

Inspired by Brad Leone and Claire Saffitz, my son and I did some research online, and created a basic northwest sourdough, with just four ingredients
