It is slightly tangy, but not too much. It produces MASSIVE amounts of bubbles in bread and creates a nice, strong but slightly chewy crust.

Discard 1/2 cup of starter.

Mix in 1/2 cup of unbleached all purpose flour and 1/2 cup of water.

Cover with cling wrap and leave in a warm place for 24 hours before returning starter to the refrigerator.

Measure 1 cup of whole wheat flour into a large glass bowl.

Add 3/4 cupt of purified, room-temperature water to the flour and mix well. Cover the starter with cling wrap and place in a warm place (the top of the refrigerator works great!) and leave it alone for 24 hours.

Discard 1/2 cup of the starter. Add 1/2 cup of unbleached, all purpose flour and 3/4 cup of purified, warm water. Mix and leave in a warm place for 24 hours.

Discard 1/2 cup of the starter. Add 1/2 cup of unbleached, all purpose flour and 1/2 cup of purified, warm water. Mix and leave in a warm place for 24 hours.

Continue the process twice a day for the next 3 days.
