Characteristics

Terroirist is predictable and reliable. He will take 10 to 12 hours to rise irrespective of the flour used. During the winter he can be a bit more lazy the remedy to that is a good does of Rye that will wake him up.

  • 50% Whole wheat
  • 50% Water

Working method

The wheat I use depends on availability. My starter was based on Bob Mills Whole wheat flour. Since then I have used Italian and french wheat and occasionally Tye to give it a boost.. Ideally I would like to move to 100% Salmouni Wheat (A local ancient variety) but I need to find enough supply for that.

Increasingly done with homemilled whole wheat, I enjoy working with Rye, Spelt, Salmouni, Kamut and Barley
