Since 2015

A visit to your library. It inspired me to make my own sourdough. Since I am also a beer lover, i made an attempt with the Rochefort 10. To date, i still use this beer.

Characteristics

My sourdough gives a unique taste by using the dark beer. Because of this, he has a light dark color (malt of the beer). You can smell and taste the beer too. Obviously not as fierce as the beer itself but it gives a special extra too the product.

To refresh I use 100% sourdough 50% wheat flour and 50% Rochefort 10.

Working method

I use wheat flour and dark beer (only Rochefort 10) in my sourdough.
