As my sourdoughs are not perfect yet, I always try something different so they always look different.
Taste & flavour
- 90% Organic strong flour
- 10% Organic whole grain flour
- 75% Water
- 10% Starter
- 2.5% Salt
- 50% Organic flour
- 50% Water
I keep Paddy in the fridge, I feed him before use and keep him at room temperature.
50% Organic flour 50% Water
I feed Paddy a few hours before use, it depends on the room temperature.
90% Organic strong flour 10% Organic whole grain flour 75% Water 10% Starter 2.5% Salt
I could`t make the layers of the croissant as nice as the normal, but it was a nice experience.
