I wanted to feed my newborn son healthy bread, so began to experiment with sourdough and whole grains.
This sourdough is hearty, with a solid balance of bacteria and yeast. It brings a pronounced lactic acid sweetness, especially when fed a few times before use in a recipe. It stores easily in the fridge, and revives quickly. It works robustly in crusty loaves, soft sandwich bread, and waffles.
