I just HAD to get interested in baking with my mission at Mockmill. So about three months into my time there I took the plunge and never looked back!

Characteristics

L'il Susie is named for her ability to wake up (Wake up, L'il Susie!) from her neglected state in the fridge and, with one feeding, be ready to tackle any strange flour I present to her. She requires no regular feeding, and only rarely a second feeding to get to top perfomance. She is not fussy about what she is fed (although I usually mill up a little rye for her...)

Remove from Refrigerator. Add equal amounts of flour (any flour, any amount) and tap water.

Working method

L'il Susie is a sourdough I created overnight using some ginger beer (culture of wild organisms growning on ginger; Etienne (12) had inoculated sugar water with skins peeled from fresh ginger. I hydrated freshly milled rye flour with an equal weight of the ripe ginger beer and in a few hours I had my sourdough.
