Characteristics

Kees is a stable, gentle starter. He almost always rises above 200%. He smells fruity with a hint of wine and a bit sour. The first smell after opening the jar is always very strong. He tastes a bit sour, and very fruity.

Feeding ingredients

  • 20% Ray
  • 20% Wheat
  • 40% Water
  • 20% Kees

Mix all ingrediënts, start with starter and water, mix, than add the flours
