I am a microbiology lecturer and I was looking for a project for students. This was an option that I thought would be interesting since no one really looks at the antibiotic potentials of these cultures.

Characteristics

Freddie is a light sourdough with a slightly sweet flavor. No bitterness. No sourness.

Recipe

Starting ingredients

  • 1Cup Whole wheat flour
  • 1Cup Filtered water

Feeding ingredients

  • 0.5Cup Whole wheat flour
  • 0.5Cup Filtered tap water

Remove about half of the culture. Use for food. Replace with 1 cup of whole wheat flour and 1 cup cold filtered water.

Working method

1 cup of whole wheat flour added to a washed and dried plastic ice cream half gallon made of high density polyethylene.
1Cup Whole wheat flour

1 cup of cold filtered water added to the whole wheat flour in the ice cream container.
1Cup Filtered water

Mix the flour and water until combined into a paste like material.

Cover with a piece of felt and place in an area it will not be disturbed.
