Since 2012

I have made sourdough for 40 years, off and on, and created starters from a variety of sources. The local Elderflower trees are an endangered species, but I have several on my land. It was an experiment for me, to draw off the natural yeast to see what it would do.

Characteristics

Very floral the first year, so it makes a great starter for pancakes and sweet doughs. After that, it mellows into an all purpose sourdough starter.

Starvation diet. When there is 1/4 inch of alcohol on top, I measure off the alcohol, then add 1 oz. to that measurement, to get my water ratio. Then add 1 oz. of a.p. flour to the starter, along with the 1 oz. plus, of water, to keep the ratio of 1 to 1 in the starter.

Working method

1 Elderflower head, flowers plucked from stems. Place in mason jar and add 1 cup of water. Let rest, shaking a few times, for one day. Pour off water. Measure equal parts flower water and all purpose flour, and let rest one day. Feed again with equal parts flour and regular water, and refrigerate.

Result

Elderflower pancakes.
