Chewy crispy crust, large holes in the crumb, not too sour as I feed and then use within a few hours

Starting ingredients

  • 25% Doves organic rye
  • 25% Lidl strong white flour
  • 50% Tap water

Feeding ingredients

Add125g of each flour, 125g of water, when bubbling draw off 250g to make a loaf then re-feed a total of 125g
