Since 2006

Well I was brought up with a really horrible childhood and was becoming a bad person . I saw an ad in the news paper on volunteering at a church and learning how to bake . So I volunteered for a year learning and never looked back . When I smell sourdough bread I always remember the first time I tasted real bread . If it wasn't for bread I would be dead or in jail . I owe my life to sourdough.

Characteristics

It's really the base of most of the bread I do . Her name is Betsy I made her 10 years ago with Apple cider flour honey and water . She come a long way and I love her . When she gets low I always talk to her and feed her slowly making sure she know she is loved . The bread she produces is such a unique and great flavour and the crust on her baguettes are what really made me keep her alive .

Recipe

Starting ingredients

  • 50% Water
  • 50% Hard white flour
  • 1% Honey

Feeding ingredients

Add water first mixing vigorously with a large strong whisk (add the honey depending on the day ) add the hard white flour mixing until no lumps . In the fridge for 5 hours outside of the fridge for 7 hours.

Working method

Add hard white flour 17° Add filtered water 12° Honey once a week
50% Water 50% Hard white flour 1% Honey
