I built a wood fire oven in my backyard and needed bread to be as special so it could only be sourdough I have shared my starter with Bakers/Friends in Ecuador, Belgium and the Philippines

Starting ingredients

  • 100% Flour
  • 68% Water
  • 30% Starter
  • 3% Salt

Feeding ingredients

  • 50% Flour and water

Add flour and water to replace what I used
50% Flour and water

Working method

1000 grams of flour 680 G of water 300 G of starter 30 G of salt. this is my basic recipe from here I will adjust as needed and add fruits nuts or whatever else sounds good
100% Flour 68% Water 30% Starter 3% Salt

Result

Bread, Pizza, Waffles and Pancakes, Aebleskivers cakes and cookies.
