My husband loves sourdough, when we lived in Hong Kong I tried few times to establish my own starter however it didn't work. After we moved back to UK, I tried again and it works very well, now I am very into sourdough baking and I have sent starter all over UK for someone interested, more than 10 familit has gone to up to now
White flour starter, 18 months old, used Canada in very strong bread flour, very active and made good bread It's usually being active I'm 6-8 hours after feeding.
