My aunt had been making sourdough in a bread maker for a while and inspired me to try. I also watched “Cooked” on Netflix which fascinated me with the transformative bacteria to the humble ingredients of flour and water.
I started very basic, 100% hydration, fed with unbleached bread flour. I am at very high altitude, 7900 ft above sea level. Ronaldo has made everything from basic boule loaves to commercial yeast free puff pastry. Since I’ve started baking with sourdough, I have not bought a single bread product from the store!
