The beast is 16 months old . We've shared a love hate relationship but I've come to learn that It is happiest when fed every 12 hours at a 1:3 ratio of strong bread flour with a touch of whole rye then tucked into a constant 25.5 degrees c. It has a beautiful sour tang with a slight sweetness. 8 hrs in to digestion makes the most flavorful levain
