Discard top layer. Pour remaining starter in a pot and weight. Add the same amount of whole wheat flour and same amount of water. Mix thoroughly. Add refreshed starter into glass jar. Cover and store.

Discard top layer of old starter. Pour the remaining starter in a pot and weight. Add the same amount of fresh flour (Whole Wheat) and the same amount of water (filtered). Mix and pour into new glass container. Store.
