I like the art of it. Bread is more healthy. The unique taste and flavor for each bread made out. Bread made by different baker give different uniqueness of it. That why sourdough baking is so different.
To me, my sourdough don't have much sourness taste. The flavor of it is so nice. The fermentation time able to be maintain as what I want.
