The first attempt was rock-hard. I learned that a portion of the whole wheat flour mix must be white bread dough. The second round has a much better texture, but was a bit salty.

  • Cup Starter
  • Cup Water
  • Cup Rye flour
  • Cup Whole wheat flour

Remove 3/4 cup starter and place into a clean Mason jar.

Add 1/2 cups filtered water (~85 F).

Add 3/4 bread, or a mix of rye and whole wheat flour.

Mix thoroughly by hand using a dough whisk.

Clean sides of jar with a wet cloth.

Cover top with a piece of cheese cloth and place the lid loosely on the jar.

Place jar under an office lamp for 24 hours.

DAY 1: Measure the temperature of 1/2 cup filtered water to ~85 F.

Add 3/4 cup bread flour with the warm water in a glass bowl and mix well.

Place the mix in an 18 oz. Mason jar with cheese cloth between the lid and the jar. Clean the inside of jar with warm cloth for better visualization.

Days 2-18: Place 3/4 C starter in clean Mason Jar.

Add 1/2 cup filtered, warm (~85 F) water to Mason jar.

Add 1/4 cup rye flour to jar.

Add 1/2 cup whole wheat flour to jar.

Mix jar contents together. Clean the inside of jar with warm cloth for better visualization. Place cheese cloth between the lid and the jar, set it under an office lamp. Repeat every 24 hours until there is a regular pattern of rise and fall. Use part of the starter in a recipe and feed the remaining sour before placing it in the refrigerator.
