In 2013, I moved to a state where Fisherman’s Wharf style sourdough bread is not made or even heard of, so I learned to make it out of a passion for sourdough. I had a wonderful mentor whose family owns an iconic Sourdough Bakery in San Francisco California, locate on Fisherman’s. He taught me every bread baking step that I needed to know, and helped me make my own starter.

Caractéristiques

My sourdough bread is similar to the original San Francisco Fisherman’s Wharf style bread. A crispy bubbly crust with a wonderfully tangy flavor. Its unique flavor comes from a 24-36 hour cold retarding period and a wonderfully dark crust. The darker the crust, the more flavor. My bread recipe starts with making a mother dough from my starter.

  • 50g Bread flour
  • 50g Spring water
  • 50g Starter

Discard approximately 50% and add flour and water, mix throughly. Then create a mother dough and store it in the refrigerator until needed.
