After I started working at Puratos, in the Research and Development department, I learned so much about fermentation, bread flavor and sourdough, that I wanted to give it a try myself!

I usually feed it the night prior to baking. For each feeding I use one part starter, one part white wheat flour and one part water.

Méthode de travail

Started this sourdough using half white wheat flour and half pineapple juice. Fed it a couple of times with pineapple juice and flour before switching to water.
