Crested just prior to the pandemic in January 2020 it started with 50/50 dark rye and white and changed and changed depending on what I had but now we have a formula

70g Shipton mill #4 white
30g Shipton mill dark rye
75g water (HACKNEY Council)
Leave for 8/12 hours to warm and active
Rises by approx double
70% White
30% Dark rye
75% Water
